Organ meats (offal) have extreme nutrition value. They are more nutrient-dense than muscle meat. In addition to an excellent protein source, these cuts are especially rich in B-vitamins (B12, folate) and minerals (iron, magnesium, selenium, zinc) and fat-soluble vitamins (A, D, E, K).
